Lecithin is a fatty substance produced by the liver and is synthesized from choline. It is also present in some foods. Lecithin took its name from the Greek word for egg yolk (Leckie-Ze). It consists of phosphatidylocholines, which is a group of phospholipids that each are produced from glycerol, phosphate, choline and two fatty acids which vary each time. Lecithin is a very rich primary source of choline and much used by people who want to lose weight.
